Jersey Mike’s Subs has announced the appointment of Stacy Peterson as President and Chief Operating Officer. A seasoned restaurant industry executive, Peterson brings decades of leadership experience from companies including Jeni’s Splendid Ice Creams and Wingstop. In her new role, she will lead U.S. operations and oversee marketing and technology to support innovation and the brand’s continued expansion. CEO Charlie Morrison highlighted Peterson’s track record in digital, marketing, and operations as key to accelerating Jersey Mike’s strategic growth.
