Jersey Mike’s Subs has announced the appointment of Betsy Mercado as the Company’s first Chief People Officer, effective immediately. In this new executive role, Mercado will lead strategic people initiatives designed to support the brand’s ongoing expansion while reinforcing its people-first culture. With more than two decades of HR leadership in the restaurant and franchise sectors, Mercado most recently served as Chief People Officer at Flynn Group, where she oversaw HR operations for over 2,700 locations.
